Easy Slow-Cooker Pulled Pork on a Bun

A friend from curling shared this recipe and it is delicious!  I used 2 tenderloins and it would serve 6 when accompanied by salads.  I have served it with both a Cabbage Salad (vinaigrette type) and Spicy Mexican Corn (recipe under Sides).

Ingredients
2 pork tenderloins
2 cups root beer
1 onion, chopped or sliced
bottled bbq sauce, your choice
buns, hamburger or crusty

Put both tenderloins into the crock. Pour in the Root-beer.  Add the onion. That's it!! Set the slow cooker for low and cook for about 8 to 9 hours.  When finished, dump out the liquid, reserving the onions if you like. Put the meat into a large pan that won't scratch - like a dutch oven.  Take 2 forks and shred meat.  Dump meat back into slow cooker and mix in a cup of bbq sauce (or more to taste). Keep warm.  Toast buns and butter if  desired.  Pile up meat on buns and add some of the reserved onions if you want.  Serve with extra bbq sauce or get creative with your toppings.  I served just the meat and extra bbq sauce and it was so succulent!!

My mother has been serving this lasagna every since I can remember.  It's saucier than my sister-in-laws true Italian lasagna (which is delicious!) but this is the one I love the best!  Everyone that has it has asked for the recipe.

Donna Ward’s Lasagna

1 lb lean ground beef                 ¼ tsp pepper
1 medium onion, chopped ½ pint cottage cheese
2 cloves garlic minced 2 eggs, beaten
2 (5 ½ oz) cans tomato paste ½ lb. Lasagna noodles, cooked & drained
1 ½  cups water ½ lb. Mozzarella cheese shredded
1 tbsp. chopped parsley ¼ cup grated Parmesan cheese
2 tsp. Salt
1 tsp. Basil

Brown beef with onion & garlic; drain fat.  Add tomato paste and next 5 ingredients; simmer for 10 minutes.  In mixing bowl blend cottage cheese with eggs.  In a 13 x 9 x 2” baking dish, spread a thin layer of meat sauce, top in order with ½ the noodles, all the cottage cheese and ½ the mozzarella.
Cover mozzarella with ½ remaining meat sauce, and the remaining noodles.
Top with remaining meat sauce and mozzarella.  Sprinkle with Parmesan.
Bake at 350 degrees for 30 to 40 minutes.
