Perfect Cottage Recipes - Breakfast

Lots of family and friends at the cottage?  My skip at curling, Terri, is also the "doyen" of all things cottage - she's had tons of experience!!  She sent me some excellent ideas for easy breakfasts/brunch for a crowd.....

 Scotty Nest eggs - an alternative to Egg McMuffins

Thinly sliced Ham (enough to cover 12 muffin cups)
12 eggs
Shredded Cheese – your choice of type
Mixed chopped herbs (basil, thyme, chives)
Salt & Pepper to taste
4 tbsp. cream

Grease a 12 cup muffin tin with Pam spray….place thinly sliced ham to cover muffin cup. Break open one egg per cup. Sprinkle your choice of shredded cheese over egg. Add some chopped herbs and salt and pepper. Lastly, pour 1 tsp. of cream over egg/cheese/herb mixture in each cup.

Bake eggs in a 350 deg oven for 10 min or until egg set.
Scoop out each egg nest with a spoon and place on a platter. Serve warm with toasted English muffins and some fruit salad.


Midnight French Toast

12 eggs
½ Cup cream
½ tsp. vanilla extract
Grated zest of 1 orange
2 tbsp. Grand Marnier liqueur
1 Loaf French bread in thick slices

Mix eggs, cream, vanilla, orange zest and liqueur in a bowl and pour in 9 x 13” pan.  Place slices of French bread in egg mixture; making sure slices are well coated. Cover pan with plastic wrap and place in Fridge overnight.

Next morning place bread slices on a well greased cookie sheet/ Bake 375 deg oven for 20-25 min. Serve with maple syrup and fruit….enough for 6 or 8 people.

  1. Tried the Midnight French Toast for Father's Day, it was a big hit!! I would bake for 15 minutes on one side, then flip and finish on the other side.
